Homemade Guacamole Ingredients 2 ripe Avocados 1/2 red Onion, finely chopped 2 tomatoes, de-seeded and chopped Handful of Coriander, roughly chopped 3 Spring onions (The green parts, finely sliced) - Save the white tops to throw through a salad as these pack a lot of flavour 1 Lime 2 cloves Garlic, finely chopped A dash of Lea and Perrins 1 Red Chilli, finely chopped, or a couple of dashes of Tabasco/hot sauce.
Slice your avocados in half and remove the stone. With a spoon or fork, scoop out the flesh and put into a bowl. Squeeze over some fresh lime juice to stop the avocados from browning. Add all of the other chopped ingredients, saving a third of the coriander for throwing on top. Add a splash of olive oil and season with salt. Squeeze over the remaining lime and add hot sauce to taste.
Serve with Tortilla Chips & Sour Cream, or add a generous heap to your BBQ's burger and serve with fresh salsa & a slice of grilled cheese.
